English Breakfast Tea – a careful mix of Assam and Ceylon teas and perhaps the most famous blend in the world. This is how millions of people
“Orthodox” refers to the leaf grade which is larger than you may be used to. This is because it has been processed in the traditional (or orthodox) way instead of being put through the CTC (Cut, Tear, Curl) machine. CTC is useful too – for example, for tea bags, or where a quicker brew is required. But there is no doubt that the Orthodox leaf is more attractive and produces a better brew. Faster is not always better!
Tea Profile
The Assam gives this blend strength, and the Ceylon flavour and balance. Together they produce a tea strong enough to be drunk with a traditional English breakfast of bacon and eggs as the acidity and astringent nature of the Assam is a match for the strong flavours. It is also refreshing enough to be drunk on its own, and many people start the day with nothing more than a good mugful of English Breakfast tea. So make sure the blend you use is a good one!
As well as getting your day off to a good start, English Breakfast is also very suitable as a general purpose tea, and many people – me included – drink it throughout the day.
To enjoy at its best, place one teaspoon per person in a warmed pot and add fresh, boiling water. Allow brewing for 4-5 minutes then strain into cups or mugs. This tea is best enjoyed with milk and sugar.
